Freshly fried sardines are a part of the Dalmatian brunch. Next to some fresh tomatoes, home-made bread, a pitcher of wine and some conversation, they make a unique experience of food and socializing by the seaside.
300 g (10.6 oz) fresh sardines
20 g (2 tablespoons) rough flour
300 ml (10 fl oz) oil
2 tablespoons of freshly ground parsley

Roll the sardines into flour. Shake off the remains of the flour.
Fry them for several minutes on all sides. Remove to a paper napkin.
Sprinkle with chopped parsley.
Serve with lemon slices, home-made bread and a glass of red wine.
