Fresh and not too ripe fruit is used for preparation of compote. During the preparation the fruit must maintain its shape, colour and aroma. Simple, fast and refreshing dessert ready in less than half an hour.
250 g (8.75 oz) apples
500 ml (17 fl oz) water
2 tablespoons white wine
60 g (2.10 oz) sugar
rind from half a lemon
Peel the apples, slice them and remove the kernel.
Briefly boil the water, wine and sugar with the lemon rind, so the sugar dissolves. Add apples and boil it all together on slow fire for 15 minutes.
Serve well cooled on its own or combined with other sweets such as ice-cream.
If you are preparing a compote with plenty of apples, then put the peeled and cleaned apples in water where you added some vinegar or lemon juice so they would not turn dark.
