Fragrant elderflowers are one of the most beloved flavors of early summer in Croatia. When gently soaked in water, they release their delicate aroma and natural properties, creating a refreshing cordial that can be enjoyed throughout the year. Simply dilute with water and serve with fresh lemon and ice for a wonderfully cooling drink on warm summer days.
Ingredients
30 elderflower heads
3 L (12½ cups) water
3 kg (6½ lb) sugar
70 g (2½ oz) citric acid
Preparation
Gently rinse the elderflower heads under running water to remove any small insects.
Place the flowers in a large glass bowl and pour the water over them. Leave to infuse for 24 hours at room temperature.
The following day, strain the liquid through a fine sieve or cheesecloth, discarding the flowers.
Add the sugar and citric acid to the infused liquid and stir until completely dissolved.
Pour the cordial into clean, sterilized bottles and store in a cool, dark place.
To Serve
Dilute the elderflower cordial with cold water to taste. Add sliced lemon and ice cubes for a refreshing summer drink.
